Harry & David is a company known for its fresh fruit and its yummy Moose Munch snackages (snack packages) but I have to admit I hadn’t ever considered using them for gift giving purchases in the past.
That’s all changed now that I’ve been introduced to their Fruit-of-the-Month Club and received a beautiful box of oranges for our first month’s delivery.
Mostly used for snacks and dropped into our picnic basket on the way to the park or the beach, I did also use a few oranges as a substitute in the recipe below.
Orange Chicken Casserole
Ingredients
1 1/2 cups uncooked long grain rice
4 boneless skinless chicken breast halves (1 pound)
1/2 cup sliced fresh mushrooms
2 cups orange juice
1 cup chicken broth
1/2 teaspoon salt
Pepper to taste
2 Harry & David oranges, peeled
Fresh parsley (optional)
Directions
Spread rice in a greased 3-quart baking dish. Cover with chicken and mushrooms. Pour orange juice and chicken broth on top and sprinkle with salt and pepper.
Cover and bake at 350 degrees for 40 – 50 minutes or until rice is tender and chicken is cooked through. Garnish with oranges, and parsley.

It was an easy and delicious recipe and one that I will definitely make again since even my son enjoyed it. He’s looking forward to our next month’s delivery of giant strawberries and has a recipe of his own that he plans on sharing.
In the meantime, I’m shopping ahead of time for some Father’s Day gifts and end-of-the-year thank you gifts for my son’s teachers. I had no idea Harry and David had so many other great items besides fruit to choose from.
